Mixed Green Leaf and Coconut Curry

Ingredients

  1. Palakura (Spinach) – 1 Big Bowl – (wash and cut into pieces)
  2. Menthi Kura ( fenugreeek leaves) – 3/4 th  Big Bowl ( Cleaned without stems and washed )
  3. Kothimeera (coriander leaves) – 1/2 Big Bowl
  4. Coconut scraped – 1/4  small cup
  5. Groundnut – 1/4 small cup (fry without oil and powdered)
  6. Onion – 1 No (Cut into small Pieces)
  7. Garlic – 15 peels (cut the peels into small pieces)
  8. Cumin seeds (jeelakarra) – 1/4 Spoon
  9. Mustard – 1/4 Spoon 
  10. Salt – to taste
  11. Oil  – 6 Spoons
  12. Green Chilli – 3 Nos (cut into small pieces)
  13. Turmeric Powder – 2 Pinches
Method of preparation
  1. Heat the oil in deep pan and add cumin and mustard
  2. Add the Green Chillis and the garlic pieces and heat for about 2-3 min
  3. Add the Onion and fry till it is brown
  4. Now add the Coriander leaves
  5. Now add the Spinach and the Fenugreek leaves
  6. After all the leaves are fried add coconut powder, salt and turmeric powder and keep in simmer and fry thouroughly.
  7. Add the Groundnut powder and mix thouroughly
  8. if you like add some lemon juice
This is good with Rice and also goes with Chapatis
